My toddler wanted waffles (as did I since we have fresh starwberries that were screaming to be made into sauce). My waffle maker I got for Yule, well the last person to use the recipe book got the waffle pages glued together so on the hunt I went and found the most epic recipe that is so good after my mild modifications it tastes like funnel cake(modified from:http://www.food.com/recipe/gluten-free-waffles-54529) !
Ingredients
1 3/4 cups of my gluten free flour blend
2 tsp of baking powder
1 tsp of salt
1/4 cup of oil
1 1/2 cups of milk
2 eggs
1 tsp of sugar
1/4 tsp of gwar gum
Vanilla to taste
Mix all the ingredients well with a whisk and cook in a waffle iron.
Eat and enjoy!!
